An Exam Officer at Zetech University, she is currently in her first year of PhD studies at Jomo Kenyatta University of Agriculture and Technology in Nairobi, Kenya, and is expected to complete her doctorate in 2027.

Research Summary
Eunice’s research focuses on improving food literacy among Kenyan adolescents. Adolescents often struggle with translating food knowledge into healthy practices, and the study aims to design and optimize a food literacy intervention tailored specifically to them. The research will unfold in four phases: identifying barriers and facilitators to healthy eating, validating a food literacy scale, assessing current food literacy levels, and using factorial design experiments to optimize the intervention. The findings are expected to provide valuable insights for developing scalable nutrition programs, with implications for policymakers, educators, and public health professionals working on youth health and nutrition.
